Purple Sprouting Broccoli with Taragon

  • 7-10 stalks of purple sprouting broccoli
  • 15g butter
  • Healthy pinch of sea salt
  • Fresh ground pepper
  • 2 Tbsp water
  • 1 Tbsp fresh or 1 tsp dried tarragon


Chop the sprouts into roughly thirds lengthwise and place in a microwave safe dish. Put the water in the dish and then sprinkle with tarragon, sea salt, pepper. Break the butter up into little nuggets and place over the top of the broccoli.


Place the dish into microwave at 50% power for 5 minutes. At 3 minutes, take it out, give it a stir, then put it back in for the remainder of the time.

You can, of course, do this on the hob/stove. Just use a sauce pan over medium heat, taking care not to burn the broccoli.

Serve hot!
